Oatmeal is one of those things that’s quick, easy, gives you sustainable energy and keeps you full until lunch. My family loves eating oatmeal so much we eat it about every other day, no kidding! There’s something about mixing oatmeal, chia seeds, cinnamon, raisins, walnuts and syrup together for not only a healthier choice for breakfast but scrumptious too. I only buy and use organic old fashion oats, because instant gets too mushy and we cannot handle the texture and steel oats take too long to cook and when I think it’s done it’s still hard. I have no patience for it and I prefer not to eat hard oatmeal! So when it came to this recipe it was a no brainer. Why not mix everything that we love in our bowl of oatmeal and turn it into a muffin? This muffin is good for breakfast, snack time and dessert. You can even freeze them and pop them in the microwave or oven. My 1-year-old twins love them!
Ingredients
Add chia seeds, coconut milk, syrup and vanilla is a small bowl and let sit for 10 minutes. While waiting on the chia seeds to absorb the milk start mixing the dry ingredients. In a medium-sized bowl add oatmeal, cinnamon, salt, raisins and walnuts. Mix it well. Add the melted coconut oil in with the oatmeal and mix well. Next add the wet ingredients into the oatmeal mixture. Smash the banana with a fork in the same bowl that had the wet ingredients and add to the batter. Now add the chocolate chips. Mix well, add batter to muffin cups and bake at 350° for 20 minutes. Serve warm and enjoy!Directions
